Middle East Eggplant Stew

 Not really stew  but it’s what I call it.   A concoction I came up with a few years ago when I first purchased some fairytale eggplant from my favorite farm, Four Root  farm in East Haddam.  

 After starting to sauté the meat in my Insta pot it literally was ready 30 minutes later.



 While the  ground chicken was browning I sliced up the eggplant

An onion from my garden


Veggies are ready






Special spices That I keep in the freezer to keep fresh


 Add  everything to the instantpot and shut off sauté function and turn on stew




 I set the timer for 20 minutes as I did not want vegetables to become mush



Let the pressure decrease on its own and here you go
