Tomato Feta Spaghetti Squash
Normally this dish online is made with pasta, but I am continuing to try and find healthy replacements. This is how I adjusted this recipe.
1.5 pound wild wonder tomatoes
8 oz feta block
1 large shallot
1 head of garlic from last years harvest
olive oil
Spring of fresh thyme, leaves removed
I put everything in a foil roasting pan and baked at 400 degrees for 40 minutes.
I used my ground meat masher to mix it all up. While it was cooking, I put a spaghetti squash (with a slice down the middle) in the microwave for 15 minutes. Let it cool a bit.
Then split it the rest of the way through, taking the seeds out and adding it to my tomato sauce.
OMG. This is amazing.
I guess there's some merit when recipes go viral. I brought back some feta cheese seasoning from Greece as they had so many delicious dishes with feta.
