Meals June 22 - 28 and New Way to Make Pizza

 

Everything is a blur, but I can describe the highlights.  Combination of 3 meals a day 

Swiss Chard and Chicken Sausage

Broccoli Rabe or Swiss Chard and Mozzarella string cheese with sourdough bread

BLT's 

Pasta and Rao's Jarred Sauce

Mushroom and Egg white Omelettes

6 slices of Big Y pizza with an app deal (according to DH)

Tomato Soup, Mac and Cheese, Sandwiches from Panera (gift card) 

Spinach and Mushroom Egg Omelettes

Breakfast Burritos Bacon, Hash browns, Eggs, Peppers, Onion

Lots of Salads, Lettuce from Farm and Garden, Chicken from Farmer

Chicken stock created from bones and vegetable scraps

I was able to create a new to me recipe today Broccoli Crust Pizza.  True winner will go into the rotation.  Photos and Recipe below


Couldn't get a photo before they dug in.  

Crust was 5 crowns of broccoli from a combination of our garden and farm share.  Steamed and then ground with an immersion blender.  Leaves and stems saved for future soup.  Added 2 eggs, grated cheese to make a dough (I eyeballed it) fresh garlic from the garden, Italian spices and 1/2 cup of mozzarella.  Mixed well and then spread on parchment to about 1/2 inch thick.  Baked at 400F for 30 minutes.  Topped with fresh basil from garden, a bit more mozzarella and pepperoni under the broiler for 4 minutes.  Dipped in Rao's Jarred Sauce.  A carb and gluten free delicious meal.
