I have been wanting to try these for a while. They called for Almond Flour, and though I have it, I wanted to make sure DS could have some.
2 cups shredded zucchini
salt
clove garlic minced
2 eggs
.5 cup feta
.25 cup grated parmesan
2 Tbsp coconut flour
I salted the zucchini and let it sit for about 20 minutes.
Squeezed out most of the liquid, but not all. Coconut Flour soaks up alot of liquid.
Mixed all ingredients.
Heated my air fryer for 5 minutes at 380 degrees
Using a tablespoon, I put 4 dollops on an air fryer paper liner. Flattened them a bit.
Cooked for 15 minutes (I did not add any oil)
flipped after 8 minutes.
Pops and I thought they were delicious.
There weren't any left for DS, LOL
Zucchini fritters are probably my favorite result of summer zucchini.
