Monday I did not cook. Really was under the weather.
Tuesday DH picked up Sandwiches at his favorite deli.
Wednesday I was starting to feel better and able to deal with food. I made a 2# chuck roast with potatoes and carrots. I froze a serving for DD. We got dinner for 4 and 2 lunches in our house.
Thursday I made cilantro lime chicken, made my own marinade with fresh limes, garlic from last years garden (peeled and stored in vinegar in fridge, rinse off and it's perfect) and cilantro. Shredded the chicken over rice plus steamed turnip greens from the garden. Froze a serving for DD.
Friday I made chili with beef from the freezer, fresh peppers and onions and a mild tomato seasoned sauce served over rice. Froze a serving for DD. Also I chopped onions and peppers for freezer, as well as onions and celery for all the salads I will make over the weekend.
Saturday DD took us out to dinner.
Sunday we grilled burgers and dogs. I made potato salad, pasta salad, tuna pasta salad and baked beans.
