Meals This Week May 4 - 10, 2025

 Sunday was nothing fancy.  Breakfast was almost non existent from my usual Sunday breakfasts.  I just cooked up some hash browns for DH and I had some Premier Protein Pancakes from the freezer.    Lunch for him was 1.5 rye bread turkey onion and mayo sandwiches with chips.  I had a cheese stick, one tostada with a single guacamole and 3 slices of turkey lunch meat.  Dinner was surprise pizza slices from DS and DH.  (she bought him some with a Big Y deal 2 slices for $2 and he bought me some when he had to do a run for work)

I also made stock with chicken I roasted at the end of this past week, and used it to use up some more split peas for soup.  Threw in some bacon, onion and celery.  

Monday was a busy cooking day.  Asparagus quiche (leftover asparagus) and Onion and Chive quiche. I baked 2# of salmon and portioned out with broccoli rabe and rice.  

Tuesday was Salsa Chicken with Rice

Wednesday leftovers there were no leftovers!  DS and I were eating salmon/rabe for lunches and dinners.  I did have one serving of the salsa chicken.      Today I created burger bowls with 93% ground turkey, red and white onion, shredded cabbage, shredded cheese and 'big mac' sauce.  Ketchup, mayo, mustard, dill pickle juice.  I thought it was tasty.


Thursday leftovers


Friday Baby back ribs, Canned corn and canned baked beans.  I had the last of the burger bowl and some vegetables from earlier in week. 

Saturday Pizza made with the flatbread.  I already had cheese, sauce, pepperoni and onion.  Cost $8.78 for the flatbreads.  Cheaper than takeout.
