I probably should have taken pictures of the steps, but oh well.
I had 1.75# of BS chicken breast. Diced it up. Cost was 9.97 Put olive oil and sesame oil in a large saute pan and cooked it up. Oils were in the house already. Added a bag of Cole slaw mix (free), half a chopped onion, leftover broccoli. Added 6 cups of cooked two day old refrigerated rice $1.32 Stirred up adding some low sodium soy sauce and more sesame oil. Made a hole in the middle of the rice mixture, added a bit more sesame oil and added the eggs $3.30, scrambling them up slowly working the rice mixture into the eggs a bit at a time. Finished it off with a tablespoon of Hoison sauce and a teaspoon of crispy chili sauce. These sauces were already in the house. Total cost $14.59
This should last for at least 2 dinners and 2 lunches for 5 people. $1.45 per serving. If only 10 meals. Honestly I think it could stretch out twice as much, but sometimes Gpa forgets he has eaten. He is feeling much better. He has been very lucky. More on him later.
