Einkorn Flour Bread Recipe

Einkorn is an ancient grain (also known as Piccolo Farro) that is known as an option for gluten sensitive persons.   i have been wanting to try it for a while.  I have read many conflicting things about it, that it wasn't good on it's own, had an odd crumb, needed to be mixed with standard AP flour which would negate the use of it in our household.

We brought some back from PA (it is grown, milled and packaged in Lancaster County) .  I purchased 5 lbs for $16.07.  Beiler's Farm.

I used my Zojirushi bread machine to make this bread.  This machine was a gift from my husband.   I used the 2 pound basic white bread recipe.  I weighed the water and flour and everything else was TB and Tsp.

320 g of 80 degree water

553g of Einkorn Flour

4 TB sugar

2 TB of Dry Milk

2.5 TB of Unsalted Butter

2 tsp Dry active Yeast

Please be aware that my bread machine has a rest mode for 30 minutes before it starts mixing.  The entire cycle is almost 4 hours.

Family felt it is a winner.  I look forward to working with this flour more.  May be a game changer for my sister.
