Sunday was a roasted chicken with veggies. I pulled all the meat off the carcass and then used onion skins, celery ends and carrot tops with the bones in the instant pot to make a very nice stock. Added salt and pepper corns.
Monday, stock with carrots, onions, celery and celaric root in the instant pot 30 minute soup setting. Then I added diced chicken leftover from yesterday. Will keep on warm for the rest of the day for everyone to help themselves. Salsa Cheddar Wheat Bread was made in the bread machine.
Tuesday was makeshift shepherds pie/meat pies. I used a pound of ground beef, cans of potatoes and mixed veggies, jar of beef gravy lurking and pie crusts (rolled up) from the freezer. Browned the meat with two chopped onions, added all other ingredients, cooked it all together to thicken up. Made two pies with double crusts. DS also helped by roasting zucchini, eggplant and beets.
Wednesday leftovers or Raos pasta sauce with pasta
Thursday still have leftovers for lunches and meatloaf with mashed potatoes for dinner. Made a smaller meatloaf using gluten free oats for DS.
Friday cilantro lime chicken with rice. Always a vege on side. Using items from freezer.
Saturday (today) will be whatever I throw together. Or leftovers.
Sunday will be a roast. Sweet and white potatoes. More than likely last of the green beans.
The roasted chicken and meals from it sounded great. Makes me hungry.
