Homemade Tomato Soup
As many tomatoes I could fit into my 10 cup instant pot, I added some carton Chicken Broth that was past best by date. I also added basil and oregano from the garden. 10 minutes at high pressure, I let it cool before adding half and half (I just eye-balled it) and then using immersion blender. Yes, skins, seeds and all. Delicious.
I dried the rest of the cherry and grape tomatoes by cutting them in half, inside half facing up in my dehydrator.
They are in a large canning jar at the moment, I plan on grinding them up to use as a tomato soup base.
