What's been cooking

 Oyster Mushrooms fried in butter with last piece of farm share cheese and a slice of bread was for lunch on Tuesday.  


I made pasta tuna salad for the hot days this week

Pulled Chicken Thigh Barbecue
I used a 3lb bag of Aldi BS chicken thighs
I did it in the instant pot frozen high pressure with 3/4 cups water for 16 minutes.  
Nicely done, easily shredded and moist. 

I saved the liquid (which became 3 cups from the meat itself) and used it to make rice. 

I mixed 1/3 of the meat with General Tsao sauce and the rest with Enchilada sauce. 
Any leftovers of the enchilada chicken will be mixed with beans and cheese and rolled in tortillas. 

I picked on veggies most nights when I got home.
