Sunchokes, aka Jerusulem Artichokes
look like Ginger (they aren't)
Raw was good. But....
Roasted with olive oil and salt/pepper was amazing.
Consistency of a potato, but tastes more like a sweet potato.
A cup raw is a bit over 100 calories. Loads of fiber. Low starch.
I cannot eat a lot of veggies, and these are full of fiber as a said, which is not a Crohn's Disease patients friend. But three small bites were very much enjoyed.
Gpa P finished the rest. LOL
