Using every little bit

I have been trying to have zero (or as close as possible) food waste.  In the Tightwad Gazette newsletter from the early 90's Amy Dacyczyn talked a lot about the soup container in the freezer.  I haven't been doing that, but I have been using rewashed baggies to freeze tidbits that I mark on the bag. 

The last time I went to the farmers market (didn't go 10/23) I prepped all my veggies for the week and had these tidbits leftover.  There are carrot ends (the root end), swiss chard stems with a bit of leaf (the root end was cut off), pepper tops, celery, onion etc.  Just little odds and ends.  I combined these with a pound of diced chicken I had frozen from the last roasted chicken weeks ago.  A bag of corn kernels I had cut off of a lone cob when we got some from the farmers market that I had frozen.  Some more onion and a bag of chopped celery tops.
 
A container of vegetable stock and another of reduced sodium chicken stock put into the crockpot before I left for the morning lessons turned into
 
 
I used some Emeril Cajun seasoning.  Saturday linner!

  1. LOVE making soup out of what seems like nothing! WTG, Sandie. We have a long tradition of Saturday soup night here, pulling out my Crock pot in the process. Saturday's are busy here and this helps me tremendously!

    1. I seem to be following a lot of your patterns. Always use the crockpot on Saturdays. Seem to have fish a lot on Mondays too. Lol. I have stock bubbling away again (started around Noon today, going to let it go til 6 am tomorrow. I plan on making a chicken mushroom noodle dish by taking the stained stock and any meat I glean back to the washed crockpot with mushroom, onion, salt and pepper and adding noodles to soak up all the broth.

  2. I used to subscribe to her newsletter. Her soup, though, was not new to me. My mother used to put all leftovers in one of those old plastic peanut butter tubs (which were also our beach toys.) When it was full, we had soup. She would simmer it on the electric stovetop in a big cast iron pot. (No Crock Pot until we kids gave her one for Christmas circa 198.) I didn't care for it much as a lot of the meat was gristle. Also, she would scrape the plates into that pail! I have been makintg a kinder, gentler version of this soup in my slow cooker on busy days for years. I do miss Amy.
